SUPERBOWL SNACKS!


Chili-Beer Hot Dogs and Bratwurst

Picture it....Hot dogs, with sausages, simmered in beer. Add some garlic, onions, and chili powder......mmmmm......!

Here's what you need...

2 bottles beer

1 large spanish onion, sliced

3 cloves of garlic.....smashed

1 tablespoon chili powder

1 small lime....halved

4 beef hot dogs

4 fully-cooked bratwursts

8 hot dog buns

Toppings: cheese, relish of your liking, onions, sauerkraut...it's up to you!


Pour beer into a large pot.

Throw in your onion, garlic and chili powder

Squeeze the lime into the pot and add lime halves to mixture

Bring this a boil.

While you're waiting...pierce the hot dogs and bratwurst with a fork, then add them to the pot

Gently boil 10 minutes, until sausages are plumped

Remove pot from the heat and cover it up

Let the sausages and hot dogs marinate in the pot for 20 minutes at room temperature or up to 3 hours in the refrigerator

Next, you grill these spicy treats....heat a grill to medium-high heat.

Take the sausages and hot dogs from the marinade.

Grill 5 minutes, turning frequently until crisped.

Then you can toast the buns on the grill.

Place sausages in buns. Serve with your toppings.


Nacho Casserole

1 can Cheddar cheese soup

1/2 cup 1% milk

1 16 ounce jar of mild or medium-hot salsa

1 bag baked, unsalted tortilla chips

1 can of fat-free refried beans (maybe you can use brown beans?)

2 jalapeƱo chiles, thinly sliced

1 cup shredded Cheddar cheese

Bacon...as much as you want for your toppings

Set the oven to 400°

Use a 13" by 9" baking dish

Mix the can of cheese soup with the milk and pour into baking dish

Add half the salsa, then half of the chips

Carefully spread beans over chips

Top with remaining chips and salsa

Sprinkle with chiles, cheddar and baconBake 20 minutes or until hot.
